I boiled 1 cup of water and added 1/2 cup of oats. Those simmered for 4 minutes and then I poured them into a bowl. I added raspberries, slivered almonds, flax seeds and brown sugar. I wasn't necessarily thrilled with the oatmeal. It was ok but a little thick and dense. There was no way I could finish the whole bowl either. Who knew a 1/2 cup of oats could turn into a full bowl of oatmeal?? I loved the raspberries though!!
I also had a small glass of orange juice. I know this should have filled me up but I snacked on popchips while I read some blogs. I LOVE popchips!! So good!!
Spending some time at Caribou today trying to finish my book club book, The Help. Also trying to find a good, non-chain restaurant to have lunch with my mother-in-law tomorrow.
Enjoy the beautiful above-freezing day!!!

You gotta try steel cut oats. They take a little longer but they have such a better texture. I put dried fruit (usually cranberries or raisins) walnuts or sliced almonds, brown sugar and a touch of milk or 1/2 and 1/2.
I just returned steel cut oats because i thought i bought the wrong kind. Do you cook them on the stovetop??
I was given a recipe for steel cut oats in the crock pot....
